The "almost Mamirijo's Chocolate Cake"

Today I make the "almost Mamirijo's cake" !

Mamie Rijo is my mother in law. I'm very lucky, because we are real good friends.
Her true name is Marie Jo, but "mamie" is the current sweet name for "grand ma", in french.
"Mamie Marie Jo" was too hard to say, for my children, when they were babies.
They found a way to tell it easily ;)
"Mamirijo" was born again !

She uses to make a devil chocolate cake !! So good but a little bit long to prepare. So I found the solution to simplify it.

So, you'll need :

  • 200 grammes of dark chocolate
  • 5 eggs
  • 125 grammes of unsalted butter
  • 200 grammes of sugar
  • 100 grammes of flour
  • 1 teaspoon of vanilla extract
  • 10 grammes of baking powder (or 1 tablespoon... PS : you won't find it on the picture, it's my blog's beginning, I'm not totally perfected ;)
  • 2 tablespoon of neutral oil (I know ... butter and oil ... Who says it was a light cake ? But look at the following point...),
  • 3 tablespoon of crème fraîche (heavy or light ! You see, I'm taking care of your health !)

Your oven must be preheat at 180°C (350°F / th 6).

Step 1 :
Let butter, chocolate and oil melted together in the micro wave, for 3 times 30 seconds. Not much longer. Your chocolate would have a burned taste.

Between each 30 seconds, stir the mixture, until it's all combined.
When it's combined, add the crème fraîche. Stir again.

Step 2 :

If you've gor a food processor, that's the moment to use it ! If not ... I hope you've got muscles (my muscles are under my arms ... not in it !) so you can use a whisk.
Whisk eggs and sugar until it becomes almost white and soapy.

Step 3 :
Add the vanilla tablespoon.

Step 4 :
Mix together flour and baking powder. Add it to the eggs and sugar.
Stir all together.

Step 5 :
Finally, let's mix the chocolate melted with the preparation.
... For this step, I needed my 2 hands, and I forgot my third somewhere in my home ! What ?... I've got several hands and 4 brains, one for each member of my family !!
I'm sure it happens to you, too ;)
Well, just to say that I couldn't make a picture.

Step 6 :
Butter the cake pan, and dust it with flour, making it rolling between your hand.
It will help the cake to be turned out easily.

Step 7 :
The ribbon of chocolate ....

And finally, in the oven for 23 minutes if you like it with a tender heart !
25, if you like it dryer.

When it's cooked, let it cool a little bit and turn it upside down, in a plate.

Step 8 :
Let it cool totally and dust it with confectioner's sugar (icing sugar).
(Sorry for the darkness of the picture).

When I've got time, I also make a chocolate icing, with butter and chocolate... Not light at all, but soooooo good !

Here a cake that children love for party time, or at home, for breakfast.

Bon appétit.
