Chicken with green olives and potatoes.

Would I dare to say that it's once again, a recipe from my mother in law ??

When I married Vincent, we were unable to cook, him and me.
My mother in law gave me some easy and delicious recipes, that we still make today.
Because don't forget : this blog is for easy and quick recipes !

You'll need :


  • 1 entire chicken (1,7 kg).
  • 2 kg of potatoes (don't worry, you won't peel them !)
  • 3 gloves of garlic (mine are HUGES ! ... But I love garlic. My husband ask me to not talk after for some hours ;))
  • 200 grammes of green olives
  • Herbs of provence
  • 1 blade of rosemary
  • Olive oil, salt and pepper, of course, 
  • Finally,  preheat you oven at 240°C (460° F / th 8)


I took the rosemary from my balcony, in which some aromatics plant grow.



Step 1 : 
Rinse your potatoes under the faucet. Don't make them soak, it would take away the starch and we need it.
Don't need to peel them ! Remember ... Fast and easy ! A daily cook.

Step 2 :
Cut them in little pieces, about 2 cm diameter.


Step 3 :
When it's done, add some salt,


... some dry herbs of provence, 


And 8 tablespoon of olive oil. Never hesitate with olive oil. 
We just use it for potatoes. Not for the chicken, after. And potatoes need to be golden...


Step 4 :
Cut 2 cloves of garlic (I have tried to crush them before, but they were so huge, that I couldn't ! Do it, it's better) and add it too.


Step 5 : 
Mix all that with your little and cute hands ! If you don't have, no problem, take your normal hands. Mine are a little bit podgy, I assume ;)




Step 5 :
Rinse your green olives, take your chicken and the glamourous part of the recipe begins ...
Introduce as much olives as you can in the collar, alternating with your last clove of garlic, that you have cut in pieces.
End with the rosemary.
Normally, you can't use all the olives here. We'll use it at the end.



Step 6 :
In the dish, salt your chiken. Use pepper too and finish with some herbs of provence.



In the oven !

After 30 minutes, take out your chicken and stir the potatoes. This way, they will be golden on each face.



Do it again after 1 hour, and add a little bit of water (5 cl) and add the rest of the green olives.



After 1h30, it's done.

    2. This was amazing!! The potatoes were fantastic and the chicken was so juicy and flavorful. I think roasting at a higher temperature than I have before made a great difference. My family LOVED it!

      So you say that, for you, 460°F was not high enough ? Would tell me at which temperature you have cooked it ? This way I could write it in the recipe.

    4. 450F was perfect! What I meant to say is that when I have roasted a whole chicken in the past, I have roasted at 325F. 450F is so much better! Your recipe was wonderful!

  11. I have this chicken in the oven now! I'm wondering what the total cooking time is. 1.5 hours? Or 3 hours? I've never roasted a chicken at 450 degrees before, so I'm not sure... Thanks!
