Zucchini, mint and feta salted cake (cake salé aux courgettes, menthe et feta).

Those 3 ingredients go so well together !

I wanted to try a recipe for a very long time.
Looking for a one including mint and feta, I've found this salted cake's recipe.

In my opinion, this is maybe not the better salted cake in the world, but it's for sure, one of the easiest and fastest.
I'll try another recipes soon, with those ingredients and let you know.

Here what' you'll need :

  • 2 zucchini
  • 120 grams of feta (greek cheese)
  • 20 mint leaves
  • 10 centiliters of olive oil
  • 3 eggs
  • 10 centiliters of milk
  • 180 grams of flour
  • 1 teaspoon of baking powder
  • A lot of salt and pepper !
Your oven must be preheated at 180°C (350°F / Th 6)



Step 1 :
Cut zucchini in small pieces and salt them. Let them wait until you prepare the rest of the mixture.


Step 2 :
Crumble feta and cut mint leaves together. Stir it.


Step 3 :
Whisk all resting ingredients together. Don't hesitate to use salt and pepper ! Your mixture could be tasteless.



Step 4 : 
Then, add zucchini, cheese and mint ! That's it ! 


In the oven for 40 minutes.

  1. Dear Axelle, What a pretty cake and it looks easy to make. Is it a main dish, side dish, bread or dessert? I have not ever heard of a salt cake before and wonder what it tastes like...probably savory with the cheese as an ingredient. Thank you! love and prayers, jep

    1. Dr Caso is right : it can be translated by Bread, in english. It's strange, we say CAKE in french. We use to cook it often, for diner or aperitif or picnic ...etc. Frenchmen like it. :)

  2. Fantastic! I have made various "cakes" as rounds, but never thought of using a rectangular pan. It's lovely. By the way, thanks to your suggestion, I now make my rustic tarts in a pan, instead of a cookie sheet to create a nice rounded edge. Great advice! Thank you!

      Sometimes, I've watched Nigella Lawson cooking meat bread, for example, without pan and for me, it was so difficult to succeed to give it the right form !
      I couldn't imagine to cook without pan. Until now, because you're giving me the will to try it !! :D

  3. En anglais, un "cake" est sucré et le "cake" français se dit "bread" :) donc là tu as fait un zucchini bread :) Qui a l'air exquis, même si je n'aime pas la menthe.

      Tu me l'avais déjà dit et comme j'ai un cerveau de poule, je ne me souvenais plus du tout du terme utilisé.
