Fast tarragon sauce (rapide sauce à l'estragon)

Summer is coming, baby ...
And it's time for lighter dishes if I want to try to wear my swimsuit, this year !

For this, several things to do :
Eat vegetables ... I can do that.
Eat chicken.... I can do that.
Less fat content... I must be able to do that.
Less chocolate...It's going to be hard, but I can try to do that.
No more wine......... Not even in your dreams.
Eat fish ... Without breadcrumbs ?... OOOOOkay, I suppose I can do that too...

BUT ...
I need sauce. Because to eat natural white fish without sauce is so depressive, don't you think ? I do.

So let me share with you my fast and simple Tarragon sauce.

You'll need :
  • 40 centiliters of light cream (yeah, don't forget, we're in diet period !)
  • 1 onion
  • A little bit of olive oil (come on ... Olive oil is our best friend !)
  • And 1/4 cup of frozen tarragon. If you've got fresh, that's good too, of course.

Step 1 :
Cut your onion in slices and let it brown, on a low fire with a pinch of salt for until it caramelizes.


Step 2 :
Add your cream and let it boil slowly for 3-4 minutes.


Step 3 :
Then add salt, pepper, tarragon and stop the fire. Leave to infuse some minutes. That's it !


Bon appétit ... even with a sad white fish and spinach ...

Rhhhoooaaa, I'm dying for a Mars ice cream !


Recapitulative :

  1. Dear Axelle-A bathing suit?! That's the great thing about living here in Oregon. No one thinks it odd if you are sitting in the river wearing your blue jeans and a shirt. I love it here! IF, I were to go somewhere that required a more 'normal' bathing costume, I think that I would just put on a two piece and just go for it! No, I wouldn't. I would wear my blue jeans and sit by the pool wearing my sunglasses and looking chic. Regards-Jamie This looks like a lovely recipe. I am going to try it with fresh sage because I have a lot of it.

    1. It would be so easy, you're right, if we could go swimming as we want. I would love to swim in oregon, with a jean and a shirt ! What a fun experience !! :D
