Easy paella, olé !!

Today, I discovered I can receive comments who don't appear on my blog.
I don't understand why and I'm still looking for a solution. 

But I just want to tell you that I reply to each comment I receive. If I don't do it, it is because there's a problem ! 

Well ... To be totally honest, when I saw the few comments I receive, I would be totally lazy or bad educated to not reply :D !

But I want to tell you, if you post a comment and I don't reply, don't be offended, this must be because I don't find it in my blog ! I just read it in my mailbox . If your mail address appears in my mailbox, I would reply. 

Well ! Yesterday, I had friends for diner. One of them is Sicilian. 
You have to know, generally, when I invite people, I usually cook something italian. For aperitif, or mean dish or dessert. There's always something italian. 

But this time, I told to my husband : 
"What could I cook without taking the risk to hear : Yes, it's good ... but it's not like la mamma does ... ?" ;)

And I had an inspiration : PAELLA !! 
No spanish friends for this night ? So, I'm going to try this new challenge !!

Each spanish village has its own paella's recipe. So I apologize if this is not the perfect paella. This is just mine ;)

And believe me : YOU CAN DO IT ! 

Here what you'll need, for 6 persons : 
  • 500 grammes of rice for risotto (what, in french, we call "Riz rond")
  • 6 chicken drumstick
  • 12 mussels (or more if you like it)
  • 1 entire chorizo
  • 1 red pepper
  • 1 green pepper ... (I used freeze tricolor peppers... 300 grammes)
  • 250 grammes of peas in can or freeze.
  • 2 onions
  • 3 cloves of garlic
  • 1 liter of chicken stock
  • 1 spanish spices bag (that's what I used) or 3 saffron doses
  • 1 kg of tomatoes (Maybe I made a mistake here. I didn't have fresh tomatoes, I used 2 can of 400 grammes each. But it prevents to feel the real taste of spices. I don't know if it's because of can or because of tomatoes. The next time, I won't use tomatoes at all)
  • Olive oil, salt and pepper.
  • And if you like it (but I didn't use them), you can add 500 grammes of squid and 15 big shrimps.



I know it's a long list. 
But that's the longest part ! All the rest is easy and fast enough.

Step 1 :
Cook your chicken in oven for 30 minutes, at 200°C (390° F or Th 7), without content fat.
You can also cook them in olive oil, at the beginning of the paella. But it works the same. 



Step 2 : 
In a pan for paella (that's better, but you can use a huge pan too !), in a looooot of olive oil, let onions become transparent. For once, they don't have to be brown. 
Add almost immediately, garlic. 






Step 3 : 
When your onions are transparent, add peppers and chorizo cut in slices and pour tomatoes. If you use fresh tomatoes, you have to take off peel, cut them in little pieces without pips ! ... You understand why I used can ??




Step 4 :
Add your rice, your spices, mussels and cover with your chicken stock.







Of course, stir all that.

Step 5 :
Finally, add peas and chicken.




Now, cover with aluminum sheets and let it cook on a low fire for 30, 35 minutes, until the rice drunk all the liquid. 
Be careful, it can burn. So stir it in a regular way.

Here's the final result. I'm sorry, on this picture, my paella is a little bit messy ! But I had to be fast, before my guests ate it !

    You asked about what to serve with salsa. It's traditionally served with tortilla chips, but it's also good on fish or chicken...
