Oranges salad (salade d'oranges)

With a paella, you have to serve a light dessert ! 
So I made an oranges salad...

... OK, with tiny chocolate mousse and meringues. Because I've got italian and black feet blood and my guests can't get out of table without supplying me they can't eat one peanut anymore.

My husband uses to tease me with this.
.. No, this is too cute : He uses to moan to me !
He says, doing this way, my guests feel obligated to eat again and again ...

Oh, come on ! 

What a nonsense !
Who keep on eating when he's not hungry anymore ? Just to please me ??... Hey ! The only person I saw eating until his stomach really explode is in the movie "Seven" ! 
And it was terrific ! 
And I'm not a serial killer ! I'm just a cook ! 

My husband must learn to relativize... :)

Well, this is a dessert I love to make during christmas time. It full of flavors and it's fresh after an heavy dish, like turkey or ... couscous ! 

The only problem is the size of my family. 
For christmas, parents, great parents, uncles, aunts, cousins, sisters, brothers in laws and children, we're 30 or so ...
Sometimes, I think better buy an orange tree ... It would be less expensive than to buy 10 kg of oranges ! 

I invite you to try this easy recipe.

You'll need, for 4-5 persons :
(the cups I use were small - don't forget : chocolate mousse and meringues in addition to that..., so I made this recipe for 6 persons). 

  • 2 kg of dessert oranges
  • 6 tablespoon of brown sugar
  • 2 tablespoon of industrial caramel
  • 1 tablespoon of rum (or cointreau, if you prefer)
  • 1 tablespoon of vanilla liquid.




And frozen mint. 
If you've got fresh, that's better !


Step 1 :
Peel oranges, taking away the white part of their skin. 
You need a sharpen knife. Here's a tutorial.



It's very easy to do. Don't be afraid to cut deeply in your fruits. The white peel must really be took away. 
You have to turn around and under your fruit. Just follow the orange's curve.



Step 2 : 
Cut them in slices and after, in triangles, keeping taking away the white points.




Step 3 : 
In a large bowl, add sugar, caramel, rum, mint and vanilla.
If you don't want, rum is not obligatory. 
But I have to say it gives a real different hot taste. It's so good.
If you don't have caramel, no problem. Just add 3 tablespoon sugar in addition.
Stir together. 






Step 4 : 
That's ready. As you like, you can put them in fridge or not. I don't like cold fruits. So, when we begin to eat the dish, I take them away from fridge.

Recapitulative, for 4-5 persons :
  • 2 kg of dessert oranges
  • 6 tablespoon of brown sugar
  • 2 tablespoon of industrial caramel
  • 1 tablespoon of rum (or cointreau, if you prefer)

  1. This looks wonderful! Like you, I love citrus and oranges is one of my most favourite fruits, I always have some oranges in my fridge! I could eat a couple of servings of this, no problem! Yum!

    1. For me, when oranges arrive, it means winter and Christmas. Like mandarin.
      And I'm totally in love with citrus ! TOTALLY !! :)
