Here what you'll need for 16-19 jam bites.
- 1 egg yolk
- 1 teaspoon of vanilla extract
- 180 grammes of flour
- 80 grammes of white sugar
- 125 grammes of cold unsalted butter.
- Strawberry jam or whatever kind of jam you like, but most of all ... without pieces of fruits. More practical. Believe me. The next time, I'll try with Nutella.
Your oven must be preheated at 180°C (350°F / Th6)
Step 1 :
Stir egg yolk and vanilla together.
Step 2 :
Mix together flour and sugar. Then add butter cut in small pieces and knead with your finger tips, until it's become as for a crumble.
Step 3 :
Pour the egg/vanilla and knead again until it becomes a pastry.
Then, in the fridge for one hour minimum !
Step 4 :
In the meantime, arrange some little muffins mold, and two utensils supposed to help you. Yes, I said "supposed"...
A wooden spoon with a round handle and... something supposed to fill your cakes. Yes, I said "supposed" once again.
Step 5 :
After one hour, get out the pastry from the fridge, put some flour on your hands and model, quickly, some small balls, of 2, 3 centimeter diameter.
Too much criminal movies ... To show you the ball's size...
Step 6 :
With your spoon, make little wells in your balls. Take care to not make a hole in them !
Step 7 :
And NOW ... LADIES AND GENTLEMEN ... Till there, everything was easy, right ?
It's time for you to understand what MESS REALLY MEANS !

Dear Axelle-Poor you with your pain and swollen face. I'm sorry to hear of your discomfort and hope that it will all be worth it in the end. I'm so glad we live in the era of modern medicine. These little cakes look amazing and should help you forget your trouble. I'm going to try these tonight with raspberry jam and a little chambord mixed into the jam. Hey. That's not a bad idea. Axelle, Dear Friend, I am so sorry to hear about your swollen face. We have a saying here "it is only minor surgery (or procedure) when it happens to someone else." You made beautiful jam bites, but I imagine they taste even better than they look. I took a small plastic bag and cut one corner of it to fill the thingy with jam, you have some seriously sophisticated materials! Also, I think that your muffin cups are too big, which must have made things more complicated than they had to be. Do you want me to send you some tiny ones?

DeleteYeeees, I knew what you were talking about with the litlle bag, I saw it several times in cooking show... And I've tried it many times ... Unsuccessfully ! I think my biggest problem came from my jam. There were pieces of fruits in it and sometimes, no way to make it goint out from the utensil.
But no matter, they are so delicious that I WILL DO IT AGAIN AND AGAIN until I succeed !!
Dear Axelle- These are so delicious! "We" made these and these were a breeze and mess free. My suggestion: use the tools Dr. CaSo suggested ( the wooden spoon handle and the pusher thingy). But, you forgot one or two items as well: Children. Ha Ha. I pulled the recipe from your website onto the ipad and set it up in the kitchen and said, "Here, girls. Make these for the church Fellowship Meal, please." For church. They did. No mess at all. And did I say these were SO GOOD? DeleteI bake them and eat one each evening. You can keep them for a long period in a close box. As we say in french : ils se mangent sans faim ! :)
Dear Axelle, Yes, my children clean the kitchen after they cook. It is the job of one daughter to wash dishes. Another daughter dries and puts them away. Another daughter clears away the mess on the countertops and puts away left over food. One son sweeps the kitchen floor and takes care of 'recycle' stuff. And the last boy takes out the trash and sweeps the dining floor after meals. The boys and the dishdryer girl clear the table. The dishdryer girl also sets the table for meals. Everybody usually has something to do to prepare some part of the meals. It's good to teach everyone to cook and they enjoy it therefore. My boy sweeper makes homemade mayonnaise better than anyone! Je l'aime Les Friandises de Confiture de CaSo. Sont-ils sur votre lit dans une boit? Je l'aime pastis et l'ouzo de la grece. Et le martini de New York. Etc. Etc. Etc. Mais je ne pas un ivrogne!
