My husband loves meat. But really love.
One of his favorite is steak tartare.
I can't even imagine to eat crude meat ...
I remember, when I was a child, my father used to buy meat to butcher and coming back home, to open the plastic bag and eat meat just like that !
Totally crude !
...
Years ago, my parents came to eat at home and my husband cooked a Steak Tartare to my father and him.
The evening, the food remaining after the meal had to be prepared.
But no way for me (and my children) to eat crude meat.
NO-WAY !
So my husband had to be creative !
I love to give him some challenges, time to time ... It's keeping on the fire of love, you know...
For example, two days after Xmas, I gave him the challenge to redo totally the bathroom ...
Well, believe me ... to make some work in house is not the best way to keep the fire of love ...
At the end of the work, if you're not divorced, you're lucky !
- Once again, I tell you to do like this, this will be better !
- Listen to me ... If you're still in this room after 5 second, I kill you ! BE VERY CAREFUL, I'VE GOT A SCREWDRIVER IN HAND !
- OK, Bob the Builder ! Do as you like and we'll see !! ...
- Get-out-of-this-room ! ...Etc ...etc ...
I love to sprinkle some extravagance in his life !
WELL ... So, my husband, years ago, succeed to make a steak Tartare ... cooked, with some arrangements.
Hurray !
We told him it was excellent and now, when I'm tired, he accepts to cook his steak.
Here what you'll need for 5 big steak !
- 1 kg of ground beef
- 1 onion
- 4 tablespoon of mustard (the one you like. We take the sweet one, for children)
- 4 tablespoon of ketchup
- 10 drops of Tabasco
- 2 tablespoon of Worcester sauce
- Some frozen shallots (not obligatory)
- Some frozen mint (if you've got fresh one, this is okay)
- Salt / pepper
- And if you like one egg and some capers or gherkins.
Add all the ingredients and stir with a fork or your hand if you prefer. You can add one egg too, at this step. It will help the ingredients to stick all together.
We don't do it... But we will !
You can also put some capers or some gherkins.
Step 3 :
With wet hand, make some ball as large as you want...
... and flatten it, to give it a hamburger form.
Step 4 :
Make them cook. And Bon appétit !
Recapitulative for 5 big steak !
- 1 kg of ground beef
- 1 onion
- 4 tablespoon of mustard (the one you like. We take the sweet one, for children)
- 4 tablespoon of ketchup
- 10 drops of Tabasco
- 2 tablespoon of Worcester sauce
- Some frozen shallots (not obligatory)
- Some frozen mint (if you've got fresh one, this is okay)
- Salt / pepper
- And if you like one egg and some capers or gherkins.
Cut the onion in very small pieces.
Add all the ingredients and stir with a fork or your hand if you prefer. You can add one egg too, at this step. It would help the ingredients to stick all together.
With wet hand, make some ball as large as you want and flatten it, to give it a hamburger form.
Yuck, I'm like you, I can't eat raw meat! But a hamburger like yours, yes, especially if it's not too cooked. Here, in Alberta, everything has to be super well cooked so hamburger patties are dry and tasteless, it's sad!
ReplyDeleteThank you for the right word "raw" :)
DeleteReally ? Why ? Is it to respect some specifics sanitary conditions ?
Dearest Axelle-I'm not following this. I thought steak tartar was raw. But the picture on the plate looks like a cooked burger. And step 4 says to cook them. Yet the last sentence right up there says nothing about cooking just flattening. Would you please clarify this. My father ordered steak tartar in a country in asia (I will not say which one) years ago and was quite sick afterwards. I was 10 at the time and knew better! You have to choose your tartar moment wisely. I bet your husband makes a great steak tartar. Regards-Jamie
ReplyDeleteYes, Jamie, you're right, I was not really clear. I had to use the word "prepare" instead to "cook". In fact, my husband bought raw meat and prepared it to him and my father. But on the evening, there were leftovers. But I couldn't eat this raw meat (I've learn a new word, so I use it a lot !! :D), so my husband cooked it. And now, he does it very often ! :)
DeleteAND YES ! You have to choose the right moment and the right butcher !
Hi Axelle, I cannot imagine myself eating raw meat! Everything needs to be cooked till well done for me! The "burger patties" looks delicious! Thumbs up to your hubby!
ReplyDeleteThank you, Joyce ! He was proud to be on the blog even if acts as if it was not important ! :D
DeleteTime to time, he came close to me saying "Write this and that, if they want to prepare it, it must be precise".
I took a tiny bite of tartar at a restaurant buffet once. Even though the flavor was good, I just couldn't love the fact about eating raw meat. I think this steak recipe sounds really good. I must give it a try. Lots of good flavors here. Thanks Axelle for the recipe.
ReplyDeleteThis is exactly how I feel : I can now eat a Tartar .... cooked ! I suppose it's the same taste.
DeleteAnd you're right too : just the fact to eat raw ... Yurk !
This looks wonderful! I am pretty adventurous about food, but would only eat raw meat in a restaurant I knew well or if I made it myself with meat I was sure of.
ReplyDeleteI like the "compromise" you've made here.
xxoo,
RMW
And you would be right, RMW !
DeleteBut even in those conditions, I don't think I would be able to be as adventurous as you ! :)
Live and marriage is this, don't you think ? A lot of compromises :D
Kudos to your husband! People have different preferences for steak, but I, too, wouldn't want to eat raw meat. It's a great idea to turn it into a patty so as to feed the whole family. It's good to be creative with what we eat.
ReplyDeleteThank you for your comment, I'll tell it to my husband ;D
